Your Eustachian tube (auditory tube) is doing its best to equalize pressure during the act of swallowing, but it and/or the ear drum may not be as flexible as when you were younger and/or before you had an ear infection, and so these little noises occur. Again: Just guessing. (Personally I often get a pssssch in my left ear when I swallow... Just letting off steam!)
