Am considering driving around Wales for a couple of weeks, stopping off as and when the mood or interest takes me. Will probably start in Cardiff and work my way around and up country. Is there anywhere I should not miss, sights, pubs et.

Where do you expect me to start David !
I wouldn't miss Pembrokeshire and St Davids. The Brecon Beacons look marvelous at this time of the year, and the Gower Peninsula is wonderful.
Go to Big Pit, in Blaenavon, and go down a real coal mine, in a cage with a miners helmet on !
If I don't stop here, I will be late for work !

Can thoroughly agree with Chris' recommendation for Ty Coch Inn at Morfa Nefyn. We rented a cottage for quite a few years at the other end of the beach (it's seen in one of the views on that website) and virtually lived in the pub or on the splendid golf course that you have to drive through to get from town to beach. Wasn't half dark trying to stagger back along the beach though.
