You only have to listen to Dimmu Borgir or Haggard to know that. Still some are really good. The best thing you can do is read up on the bands.
What you consider Symphonic Metal is actually a combination of different genres, such as Folk (Inkubus Sukkubus, Paradise Lost) some Doom, and a lot of Instrumental, Melodic, Goth and Darkwave.
Try the following site and just do a genre search. Then read up on the bands and see if they sound like something you might enjoy.

You can also try BNR Metal Pages (http://www.bnrmetal.com/), I tend to find a lot of good bands on these 2 sites.
As for the immediate bands then try Sonata Arctica, Symphony X, At Vance, Angelzoom, Blutengel, Iced Earth, Moonsorrow, Tristania.
If you just want a quick listen, then try http://www.live365.com/index.live. It's a radio site and you could listen to your fav genre for free.
