Low Or No Gluten Crust Recipe - Any Ideas?

Does anyone have a tried and tested recipe for low gluten or gluten free pastry? I'd like to experiment with soy flour - I've found American recipes which have that 'cup' measurement (boo) and also seem to include large amounts of butter and cream.....trying to avoid animal fats too....

A bit off subject, but you could try this recipe for quiche from one of the slimming clubs.
3 eggs
I tub low fat cottage cheese (natural)
Mixed herbs and seasoning
Filling of chopped ham/peppers/bacon/onions or whatever you fancy
Beat the eggs and mix with the cottage cheese. Put the mixture and filling in a flan dish and bake for 30 mins 190c/ gas mark 5.
It's very tasty hot or cold and low in fat.

Here's a Paleo site with gluten free recipes. They use almond or coconut flours,and vegetable fats. Some do not use eggs also.
