don't know if this is the right place to ask it's a knitting question
would using two strands of double knit have the same effect as chunky wool

I have and would again , it may slightly alter your sizing so depends on the finished product.

I am assuming you have a chunky pattern?
If so, it will give you a tension square to knit, try that with your two strands, measure it and adjust the needle size till you think you are close enough,
