Anyone know of any sites about what Victorian/Edwardian hotels were like in terms of running/admin?

Having trouble finding all my searches just bring up modern hotels, but would they have changed all that much in 100 years or do you think that hotel jobs and admin are the same now as then.

What type of analgesic do they use in A& E departments and in what doses?

Also what would paramedics do for sucking chest wounds.And what facilities etc do they have in ITU's for dealing with these wounds. It is for a novel that i am writing.
