Coeliac Disease

I have been on a gluten free diet for six or seven years now. For the last couple of years I have been getting coeliac-like sympmtoms. I was referred to the bowel clinic but for one reason or another have not managed to see anyone yet. (Its not cancer).
Can anyone suggest an allergy, food intolerance or such will still show the same symptoms. I am also T1 diabetic, pesctarian with Parkinsons. For the last week I have cut out dairy products and bananas without sucess.
My diet is fairly good and does not change much. My GP suggests I take out each food in turn until it gets better.
Diet is strictly gluten free and includes mainly the following;
muesli, soy milk, apples, pears, gf bread(genius 3 seeds), McCains oven chips, fish
gf pasta, potatoes, salad, veg of all sort, potatoes, eggs,
I am a male person of an esteemed age and am pretty physically active.

How was your Coeliac disease diagnosed?...what were your symptoms and did a gluten free diet eradicate your symptoms.
In the last 2 years have you been seen at the bowel clinic and have you had a Colonoscopy ? If you have, then was it all normal?
Why do you assume your symptoms are due to food intolerance?

After many years of bad bowel probs I was diagnosed by a blood test showing coeliac antibodies. Treatment was to go on a gf diet. Used to have serious heartburn. At least the new diet cured that. Had a colonospicy after the recent probs which was not conclusive but was not cancer. showed a small polyp in my stomach and a small haitus hernia. I am on the bowel cancer monitoring program.
I hoped there migh be someone out there with similar probs who could say a link had been found with my diet.

I am Gluten Free to help with my Rheumatoid Arthritis as Gluten can aggravate and have an inflammatory response. In this process I cut out dairy and started to use soy milk. Within 3 days I had bowel problems, cramping, diarrhea,tiredness and bloating. I mentioned this to my RA nurses and she said come off the Soy Milk. I did and the symptoms stopped within 48 hours.
