we had it for tea last night. here's how i did it -
3 large red onions (only because i love them)
2 large courgettes
8 rashers of bacon
carton of button mushrooms
2 tubs low fat creme fraiche
some grated cheddar and parmesan
pasta bows
fry onions, then bacon cut into little bits, then courgettes and mushrooms. stir in creme fraiche and grated cheese. cook the pasta while you're doing all this, then stir that in too. we had it with some garlic bread. so easy and sooooo tasty.
i rarely follow a recipe exactly and vary it according to what i have in and how many of us are eating. the above was for 3. 2 tubs of creme fraiche was probably too much, but i don't think one would have been enough.
