Goats produce more milk than cows when considering body weight. Ratios are difficult to ascertain since there are so many different varieties of cows and goats. However, when converting feed to milk, goats are far superior. Goats milk has roughly the same make up as cows milk, but the fat globules in goats milk are considerably smaller than that of cows. This results in easier digestion by humans as well as less required homogenization. Goats tend to be cleaner in many respects than cows. Having been raised in cow country here in the western U.S., I can attest to the fact that cows draw flies (due to body weight and the nature of their excretions) are suseptible to diseases that goats are not and require specific feeds that goats, generally do not. World wide, goats produce several billion (with a b) more gallons (or liters) of milk than do cows. However, here in the U.S. goats milk (and meat) lag far behind in popularity than that of cows...
