Potato shells - Bake the tatties (and do more than you need as you can freeze them) cut in half, scoop out the flesh and mix with whatever other stuff you want and pack back into shells and grill for 60 secs to brown.
Scallops with black pasta. Takes 4 mins. Boil water, add pasta (black is nice as it is glossy when cooked and easily avialabe too) and cook scallops for 90 secs a side on hot griddle. Chop and de-seed a red chilli, serve scallops on pasta with chilli, (nice crusty bread) and fresh salad. Substitute scallops with langoustine, fresh prawns, tofu even.
Hot smoked or lemon or peppered mackerel - blitz into a pate with some mayo, lemon juice and seasoning, and have on toast, or jacket spuds, etc. Easy to mix by hand if no blender.
Fish stew. Dead easy - 15 mins tops. For 4 people: 1/2 pint water & 1/2 pint milk. Add diced potato. Boil and simmer 10 mins. Add chopped fresh veg - brocolli, carrot, corn - and cook 3 mins more. Add diced fish - white, smoked, whatever. Cook 2 mins. Serve, (and mop up juices with crusty warm bread.) Make it oriental with some coconut milk and add few chilli flakes and prawns.
Stir fry any veg mix around. Takes 5 mins, add a nice sauce - fresh is going to be better than a jar. Easy instant Chinese is to add: white wine vinegar or rice wine vinegar if available; soy sauce, veg stock, dry sherry and tomato puree. Add a little water if too dry. This with schezuan peppers or chilli is an easy base for a good flavour with loads of things.
Anything with couscous. 2 mins to heat through. Season and serve with mushrooms, veg etc etc.

Hi nickmo and Playaxvx, great recipes nickmo, but I do find Philadelphia cheese a fab binder with mackeral for a pate and I bake...
Salmon fillet with butter, a small drizzle of honey, chives, lemon juice and garlic salt for 20 mins served with rice and salad, and any salmon left over can be mixed with philly cheese for a pate on toast...
Try chinois' sesame oil stir-fry. Basically stir-fry thin strips of any vegetable, meat or fish you find edible with some onions and garlic in a really hot pan. Add in quite a lot of roughly chopped ginger, a couple of chillies, a glug of soy sauce, and a glug of sesame oil (available in supermarkets). Season and squeeze a lemon over it. Salty, sour, hot & aromatic. Cheap and easy. Bargain.
Sorry, I know it's been a while, but in case you are still interested, here's the recipe:
Trout with herb stuffing
2 TBS butter
2 shallots, chopped
50g breadcrumbs
1 TBS chopped parsley
1/2 TBS grated lemon rind
salt/pepper
1 egg, lightly beaten
4 brown or rainbow trouts, cleaned
New potatoes and a green vegetable to serve
Melt half the butter an dfry the shallots until softened, but not browned. Remove from the heat an d stir in bread crumbs, parsley, lemon rind, salt and pepper.
Leave to cool slightly, then stir in enough of the egg to bind the stuffing ingredients together.
Season the fish inside and out with salt and pepper and fill with stuffing.
Arrange in a single layer in a greased ovenproof dish and dot with remaining butter.
Bake in a preheated oven at 400�F for 25 minutes until fish flakes easily when tested with a fork.
Serve with potatoes and vegetables.
