Favourite Simple/Quick To Make Dinner Ideas…
After my earlier post in Body & Soul I'm looking for quick, simple to prepare but tasty, filling evening meal ideas. Really not in mood for spending much time in kitchen at the mo but need a filling meal for MrSmow eve. (And yes I know he can cook but works such long hours).
I've got regular oven, microwave, 2 slow cookers - 1 small & 1 large, steamer, toaster...
Any ideas appreciated x

Otherwise try adding some Stilton to half a can of Chicken in White Sauce, perhaps throwing in some ground black pepper as well:

Pour it over some freshly-cooked pasta or perhaps over a jacket potato. (Add some salad if you want). I had the pasta version for my teas this evening!

Traffic Light Toast is one of my simple favourites.
Toast two slices of bread. Instead of using butter, put a decent layer of Tomato & Chilli Pasta Sauce onto each one:

Then add slices of mature cheddar, with diced red and green peppers on top of them. Grill until the cheese is really gooey, with the peppers just starting to scorch around their edges. Serve with salad, if desired.
quick and easy rissotto 10 minutes from start to plate
lighly fry 1 medium onion
whilst cooking 2 x 2 minute savoury rice
disolve 1 oxo cube innto half pint boiling water
1 small tin of spam diced into 1cm squares
add the rice and the spam into the frying pan with the onion in add the oxo stir and simmer for five minutes to reduce the liquid
then serve with a sprinkling of chedder on top
tip :- add an extra packet of rice if you're hungry
Fish can be simple but tasty.
I cook a frozen cod or salmon fillet in my air fryer.

(Oil both sides, wrap in foil and place in a pre-heated air fryer for 20 mins at 180C).
I cover that in instant cheese sauce (made extra thick)

and serve it with a well-buttered jacket potato, plus something green (such as sliced green beans or peas).
PS: If you're wondering what you could do with the remainder of the jar of Tomato & Chilli Pasta Sauce after you've made Traffic Light Toast, the answer's easy. Use it as a 'cook in' sauce for some chicken breast fillets. (30 mins in the oven at Gas Mark 6 / 200C). Serve with a well-buttered jacket potato and something green.
(I use a lot of pasta sauces to casserole things in. They're basically the same as 'cook in' sauces but a lot cheaper!)
