As the question says... Can anyone tell me if 1 female rat will breed with her own offspring?

Yes. It is only humans (well most) that have any sort of aversion to mating with their family members. Animals have no such instinct or aversion, and it happens frequently in both wild and domestic animals.
what about people from Norfolk?
Rats are sexually mature at five weeks, so need to be removed from their mother if male.
