We have a cage in the back for our pup but you could also try spray on chemicals from pet shop designed to stop them chewing furniture.

Chewing is usually a result of boredom, try giving him something else to chew on, a hide bone maybe, however, i hate those things, would never give one to my dogs but they may help.
You could also just give your dog a good long run before putting him in the car, he will probably just sleep then.
