Quick and Easy Chicken Recipe Wanted !
Hi there.
Just wondered if anyone could help with a quick and easy recipe for 4 chicken breasts (approx 500g) that I have defrosting in the fridge at home.
I have very little ingredients at home so will be popping to the supermarket on the way home but am getting a bit sick of the usual jar of indian / chinese sauce !
I'm looking for something that isn't too costly and is quick and easy to prepare and cook. It's only for myself and OH.
Any suggestions would be great.

1 ball mozzerella-sliced
1 jar pesto
1 cup good chicken stock
Lightly fry the chicken fillets in olive oil or a bit of butter. When almost done,place a bit of pesto and slices of cheese on top. Pour stock into pan-let bubble a bit,then cover immediately.Leave for about 30 seconds,or until cheese is melted....serve immediately.

Put chicken in oven dish mix up the other stuff pour over cookin med hot oven for 45 mins
Cut chicken into smallish pieces, and fry in a little sesame oil, set aside...
Make a lemon sauce with the juice and zest of two lemons, a tablespoon of cornflour, two tablespoons corn oil and 1/2 pint water and one tablespoon caster sugar blended together and brought slowly to the boil and then simmered until clear and sticky fry some strips of red and green sweet pepper and some sliced mushrooms add to chicken pour over sauce and cook for about 20 mins serve with jasmine rice
