Why is it if I go to the gym Monday evening after work, I wake up Tuesday and feel fine. But when I wake up on Wednesday I get the muscle pain. I just don't understand how I can be fine all of Tuesday but not the day after.

Muscle fibres are damaged during strenuous exercise. On the second day the fibres are really starting to heal. They stick back together and will become short and tight unless they are regularly extended. It is important to do stretch during the first couple of days so they heal with the ability achieve their full length.
