Plenty has been said already, but there is a lot to be said for mushrooms. Whether gathered wild (stampede in Tesco�s etc) or cultivated, they are naturally high in potassium and are also rich in copper. The shiitake mushroom is a highly rated delicacy and is the second most widely cultivated mushroom in the world. The fruiting body of the shiitake is rich in proteins, vitamins and minerals and a range of other health promoting components. It is highly prized for its nutritional value and many purported medicinal (lentinan) and therapeutic properties. Mushrooms are also a good source of riboflavin (B2) and niacin (B3) and contain no fat or cholesterol.
