why do some people's eyes flicker like crazy, especially when they are thinking hard. Like, the look slightly left and right but REALLY fast. Can they even see when they're doing it?

The eye movements you describe are called saccades ...they are normal and our eyes are always making them. And no-we are not aware of them. These movements help the brain to record information; also,depending on the type of movement ,various diseases of the central nervous system may be indicated so they are used as a diagnostic tool as well.

I do know of saccadic movements, I don't think you can see without them? But these are very pronounced, like someone is looking very very quickly left and right. You notice even from 10 feet away.
