For the scart cables, lets assume for a minute that you've got 100 scart sockets at the back of your telly. There should be two scart sockets on the back of your digibox. One goes to the telly (AV1) while the other goes to the video (AV2). This is so that if you're recording something and you adjust the volume on the digibox, it won't record the screen graphics.
There should only be one scart out socket on the back of the video. This goes to the telly. The PS2's scart cable just goes to the telly.
Since you say you've got yourself a 3 to 1 scart box, it's unlikely you have 3 scarts on the back of your tv. The first thing to try is to plug all the things into the box and put it in the scart on the tv. I've no had much luck with those things. A lot of tv's have 2 scarts on the back but also some phono style sockets on the front under a drop down flap. If that's the case, use the back scarts for your digibox and video. The PS2 should use a phono to scart adaptor in which case, pull it off and use the three phono cables in the front of the telly. If there is only two phono sockets on the front, that means the telly doesn't do stereo so just use the video and one of the audio leads and set up the PS2 to do mono sound.
I think that's nearly all the options. There may be slight differences between this description and what you've got but it should put you in the right direction. You will be able to record off the digibox if what you've got even slightly resembles what I've said here!
