hands seizing up

Why do my hands sometimes 'seize up' what I am doing anything fairly intricate? This ranges from peeling veg to dusting. It doesn't happen all the time but I am about to start in a shop where I will be doing displays of crockery, china etc and I don't want it to happen then! The 'seize' doesn't last long and I just have to flex my fingers to get rid of it but I would like to know why it happens and what I can do to stop it. I am 44 so don't think it is arthritis, at least I hope not! Any ideas? Many thanks.

I get stiffness and problems doing certain things I used to, drives me mad! Have noticed it particularly with things like knitting/crochet, beating cake mixture, rockclimbing etc... I put it down to my arthritis though flexing doesn't really help much.
