We're having Beef Bourguignon (chunks of Aberdeen Angus steak cooked in burgundy wine with garlic, button onions, button mushrooms, smoked bacon and fresh herbs. I'm doing buttered new potatoes and new season carrots. For pud there's mango and passionfruit cheesecake.

I take turns with salmon steaks, chargrilled chicken and smoked mackeral. I'm trying to cut down on the amount of red meat I eat Ummmm, but I would love beef strips in my stirfry.

Certainly Ummmm:

For 4-6 people you will need
1 large sliced onion
2lb braising steak, trimmed of excess fat and cut into cubes
a packet of smoked bacon lardons or 6oz piece of smoked bacon cubed
3tbs olive oil
a small amount of flour ( in a large plastic bag, about a tablespoonful or so)
1lb shallots or baby onions, peeled
2 cloves garlic, crushed or minced
2 large sprigs of fresh thyme and a bay leaf
500ml good red wine
3/4 - to a pound of button mushrooms, cleaned
salt and freshly ground black pepper
Fry the sliced onion and garlic in half the olive oil till just beginning to colour, drain and put in a large casserole then
Toss meat in seasoned flour and cook in the same half the olive oil till nice and brown all over, drain with slotted spoon and put in casserole dish
Tip any remaining flour into pan and pour in wine, stirring all the time so no lumps. Pour over meat and onions add herbs, season put in low oven, gas 3, 140 degrees 320F for about two hours.
With other half of olive oil, fry bacon lardons, onions/shallots and mushrooms, add to casserole and cook for a further hour.

I might add, sometimes it takes longer cooking, up to an hour and a half, depending on the quality of the meat, if the sauce seems too thin, just decant into a saucepan and boil it down to reduce.
