Mini Cheesecakes......

Rather than make a cheesecake in a conventional round baking tin, what would be the best way to make mini bitesized cheesecakes?

In one of thosc cake tins that buns are made in?
How small? You could make teeny rings from foil covered card or use small round biscuit cutters. If you did them in a bun tin, I reckon they wouldn't turn out unless you froze them in the tin and turned them out frozen.....maybe line the bun tin with cupcake papers?

No bigger than cupcake size, I dont think cupcake holders would be any good because of the flared out sides
Pastry cutters
Use a round pastry cutter, you can get them in loads of sizes

So make a normal sized one, let it set and then cut them?
You could make rings using foil if you need loads of them?
Well you can try that, or fart around making individual little ones inside pastry cutters...............
I seen on tv....cans of tuna? Or similar size..cleaned out and used x

I need to make around 50 so I guess making a few large ones and cut them out after would be the best option, thats if they hold together
you can buy pastry rings, so will produce a flat base, but I would go with making a large base, cutting out with pastry cutters, and then adding the topping before fridging them, should be fine.........

welsh, so you think adding the topping after cutting the base would be better rather than cutting out from a larger cheesecake that has set?

I would make a large one in a rectangular/square dish, once its set, pop it in the freezer for 20 mins before cutting out the size/shape you require ( just to save the topping from warming up)

Don't know if you have a Morrisons near to you, but whilst in there today, I noticed in their First Home range, they had a 12 cup bun tray at 89p, I remembered this post and thought that they would be ideal. They weren't very deep but would take a mini cheesecake and would be easy to get out once made too.
