Chicken Breast recipe
I've got a few chicken breasts out for tea.
Can anyone help me with what to do with them. I was thinking some sort of cajuan style chicken, something without a bisto gravy. Either something that i can fry or put in the oven. Not fancying chicken kievs.
I'm having veg and potatoes, need some insperation.

But you could make a nice bacon & mushroom sauce; fry onion, bacon & mushrooms and add creme fraiche or single cream & a good dollop of mustard & seasoning. Add some leek to the frying pan if you have some - this goes lovely with smoky bacon.
This requires minimal effort and is quite different. We do it often, here in the U.S.
CHICKEN CRANBERRY BAKE
3 whole chicken breasts, skinned, boned & halved (we actually leave the bones and skin on for flavor)
1/2 c. chopped onion
1 tbsp. oil
1 c. ketchup
1/2 c. firmly packed brown sugar
1/2 tsp. grated orange peel
1 1/2 c. fresh or frozen cranberries
Heat oven to 400 degrees. Grease 3 quart baking dish. Place chicken breast halves in greased dish. Bake at 400 degrees for 25 minutes.
Meanwhile, in medium skillet over medium heat, cook and stir onion in hot oil until crisp tender. Add ketchup, brown sugar and orange peel. Blend until brown sugar id dissolved. Stir in cranberries. Spoon over partially baked chicken breasts. Bake an additional 20 minutes or until chicken is tender. Serves 6...

Cut the chicken breast into 2-3 bits each then marinade in a couple of spoons of soy sauce and dry sherry for about 30 minutes.
Get the wok out and stir fry some onions, chopped up quite fine. Add the chicken, including the marinade and add some chicken stock. When chicken no longer pink add whatever veg you've got (again, sliced or chopped, whichever you prefer) and let it all mingle together for about 10-15 minutes over a medium heat, stirring occasionally. If you want it a bit spicier, add a bit of ginger when you do the onions

Should be yummy.

just chuck them in the oven with sliced potatoes onions and tomatoes.... add loads of chilli, a couple of sliced lemons or lemon juice and some salt then sit down for an hour or so .... serve with salad and bread.... dead easy lazy meal :) when its done and out the roasting dish just add some boiling water to the juices and make a thin gravy (its nice on the salad)
