Add 1 cup dried wholemeal couscous and one cup of vegetable stock and juice and rind of one lemon into the veg, cover with foil, turn off oven and leave 30 mins -fluff up with a fork, sprinkle toasted pine nuts on top and serve. Any leftovers will freeze or serve with chops or sausage for non vegans. Beware of 'fake' meat as its not vegan!
Vegan pastry: use Trex, a pure veg fat, using 20% less than if using lard/butter; makes lovely pastry; fill your pie with veg.
