poaching liquid

I'm poaching chicken breasts and will be making a white wine sauce with the poaching liquid. How important is the celery? It's the only thing I haven't got...

The other veg are carrots, onion, bay and peppercorn.

Not essential, it balances the sweetness of the carrot and gives a bit more depth of flavour. I'd be surprised if you noticed it was missing.
