I've got some nice Courgettes and fancy making soup.I do make soup often but have never done Courgette. Would tomato go nice with it? Or roasted peppers?
Both would go well. You could try chopping all ingredients up together even add some onions and garlic, and roasting them in oven with some seasoning and olive oil . For about 30mins or until cooked before liquidizing with additional water.
Add onion, garlic and potatoes with some basil, oregano, chives and blitz with a little cream .... serve with parmesan croutons (little heaps of grated parmesan baked on low until set and golden) Yum!
I just do courgette soup on it`s own as the flavour is quite delicate. I do start off with a finely chopped shallot though. Saute shallot and sliced courgette in butter to sweat. Then add a mix of chicken stock and veg stock. I add white pepper and salt to taste and that`s it really. You could add a little garlic. Then blend in blender.
Sorry I should have said: I always start any soup worth onion garlic and celery leaves, then add the main veg with stock. I made a celery, white onion and fennel last week. It was delish! I was concerned that Courgettes on their own would be dull.
I make a tomatoe based suop with courgettes, it will be fine.
alternatively you could make a simple courgette curry. Butter curry paste courgettes...simple quick and tastes beautiful.
