If I were to make this do you think it would taste nice or disgusting, would it work as a concept?
What I'm thinking is to make a pastry case, fill it half way with some mincemeat (ie as in mince pies from christmas, not mince), top it off with some goats cheese and bake?
Go for it. It sounds odd but lovely. Give some of it to me and I will eat it with relish. In one of the Enid Blyton books one of the sandwich fillings is sardine and strawberry. They admit it would be odd but nice.
Why shouldn't it work? Sweet and savoury can go well together. Often a restaurant cheeseboard will come with grapes, and I've enjoyed mince pies accompanied by a couple of slices of vintage cheddar and a glass of red wine. But goats cheese - I'm not sure. Let us know?
