Clanad's answer about collard greens on another thread set me thinking about this. So, for starters, how do you make corn bread and what do you eat it with? Ditto grits??

As far as I understand it, grits is merely porridge made of maize flour, a staple diet of the poor in the Southern states.

Plain flour is the one.
Thanks Pasta.
if you want to spice your cornbread up....sweat a large onion (finely chopped) and 3 chopped green chillies and add to the mixture with freshly squeezed lime juice (1 or 2 depending on taste and size of bread) before baking....is super yummy!
you can also cover the bread in grated cheddar cheese for extra zing....x
I used to put cheddar in the batter. You can also add tinned sweetcorn for a different texture.

Thanks all
bloody phone! I've just set best answer and reported myself!!
Apologies for delayed answer 237SJ... I've never tried it in a bread machine, since our kitchen is devoid of one... any flour will do... cornbread is not fussy! I'd try the recipe without any flour and an extra egg for historical accuracy...
