I usually par boil it first...then coat in olive oil. It takes 30-45 minutes...I like it a bit crispy and blackened around the edges.
Exactly as pasta freak says tho not necessary to par boil

Not as long as you think it will! When you cut it up it feels as hard as a rock, but it roasts in a susprisingly short time.

It is very difficult to 'peel'. The outer skin is solid, but I have just discovered already done for you in the freezer compartment in Tesco. Yay!! I like butternut squash, especially if it is already peeled.

thanks starbuckone the one i got from morrisons wasnt to bad to peel ,like a swede eh!
Butternut squash has a relatively thin skin and I don't both peeling it when roasting or using in tagines. It is perfectly edible and those who I've cooked it for with the skin on have never objected.

thanks ecclescake i will give that a try ,the one i cooked friday turned out lovely thankyou everyone for your help
Off the topic a bit! but we always put a squash in our curries, no need to par boiled first as they don't take long to cook, and they soak up all the curry juice and taste Delicious! I fact we have used a squash instead of meat for quite a while now, saves a bit of money and is probably healthier for you as well!

If you are roasting try pouring over some honey instead of oil.
