You can do it straight away and then even pop it into the freezer if you don't need it straight away. Pheasants don't really need to be kept like other game.
Don't they need to be like me then?
You need to do it as soon as possible, bacteria will grow quite quickly. Pluck it, gut it, pop it in the freezer if necessary, but it will taste better and gamier if you eat it fresh.
You can freeze it as it is, feathers and all or just pluck and gut it and then freeze it.
or hang it until the maggots drop, nice and tender then!
Wrap tightly in tinfoil then throw in the bin!
Gosh, we don't get many potential pheasant pluckers asking questions here. This place must be going up market.

Not keen on pheasants then Maggie ? We'll be around for tea later then Mooria.
Sooner the better, ignore this madam about hanging for a fortnight
Watch out for the 'shot' when plucking it and even more when eating it.

I think all Game is best fresh, looses a bit on cooking. Game also makes excellent curries as its flavour comes through the spices.
