Very fresh eggs stay flat on their sides at the bottom of a bowl of water. Eggs that are not newly laid, but are still definitely edible will stand on the pointy end, but not float. Eggs that float have gone bad and shouldn't be eaten.
The sell-by dates are one of the more perfidious aspects of modern retailing. Supermarkets make you feel stupid if you don't take advantage of the "buy two, get one free" promotions. This means you buy more than you actually need and end up throwing much away because an arbitrary sell-by date has expired. Studies indicate that up to a third of all food purchased is binned.
