Curing yourself is the most assured method.

Otherwise buying bacon from you local farmers market or farm shop is, in my experience, reliable.
Lots of places now do dry-cured bacon which is what you want - none of that yukky white goo that oozes from bog-standard bacon.
Asda are doing their Extra Special bacon dry cured, smoked or plain at two packs for £5, jusy lovely tasty bacon, no white salty water
