In National Chip Week I'd like to learn how to cook the best chips at home.

So far the best results come from microwaving the potatoes for 5 minutes and then cutting them into wedges before popping them in the oven on a lightly oiled & foiled tray. Can anyone improve on this?

(No deep fat fryer by the way)

well, that'd good, I had some tonight, our chippy didn't say anything abotu National Chip week, only Under New Management.

Another nice......and free one is, put your potato peelings on a tray and spray lightly with oil, cook in oven and eat with dip of your choice, tasty, fairly healthy with the roughage in the skin.......and best of all.... FREE, because they normally get thrown away. X
I do my roast potatoes like that, par boil potatoes then shake them to roughen edges and put on an oiled tray to roast in the oven for about 1 hour sprinkle with rosemary sometimes. Chips I peel, cut and soak in water for 20mins to get the starch out, pat dry and put into a frying pan of hot oil. When done, drain and put the chips into a dish lined with kitchen paper to soak any excess oil, then serve.
Lol..I've never been good at making chips .I only make good flat chips ,as my Dad used to call them .New spuds sliced and fried .
A chip cooked in the oven is not a proper chip in my book :)
I prefer to go and have chips cooked for me at a certain stall called Brewers on the market in GY :)

Yarmouth chips are indeed a great tradition shaney, I do have them every so often out of the paper. But its flippin cold standing on that market this time of year!

I also like them at home occasionally but I banned the deep fat fryer some 15 or so years ago when I refused to empty it, clean it and pack it up to move house!

I will try those potato peelings Sparkles, they sound tasty.
