I have a spritzer made from white wine and soda water. Why doesn't it taste as good as it does in a pub or restaurant?

Possibly because you used the wrong type of wine? (There can be quite a difference between a spritzer made with a dry or a sweet white wine).

Or perhaps the places you've been drinking spritzers in have actually been making them with lemonade? (When I've worked behind bars I've always asked whether the customer would like soda water or lemonade in their spritzer but a lot of bar staff fail to do so).

No, Chris. I would know if it was lemonade. I can detect sweet stuff a mile away. I do not have a sweet tooth.
In a pub or restaurant you would be paying the same For one drink as you would for a bottle at home almost. Because of this cost when you go out you program your mind to enjoy it even if you are not. When you get home and try it you think yuk! I want an undiluted glass of wine instead. IMHO

May be the temperature - pubs have very cold fridges

or the concentration - it's easy to over-dilute when making your own - pubs run at about 60/40 or even 70/30 wine/soda ratio

Sunny Dave has got the point. In pubs wine can be served in measures of 125ml or 175ml. So if you have a half pint glass with a 125ml (approx 1/4 of pint) measure plus ice topped up with soda you are diluting half the drink. A 175ml measure topped up would taste nicer. I too now drink less wine than I did a few years ago only because I only now buy a bottle at a time. Not keen on spritzers I like red & white but not that keen on rose or anything fizzy.

I chuck loads of ice (8 big cubes) into a glass and pour the wine over it. It feels like a big drink but the glass is mostly full of ice which melts slowly.
Could it be that the environment may have something to do with it ?

Some how food & drink nearly always tastes better to me outdoors

It might also be that i use really cheap soda water which is 39p per bottle.

It could be your choice of soda water. Cheap soda water isn't as fizzy. try Perrier it really makes a difference. Personally, adding water to wine is a big no-no! I'd have the water between glasses...
