Avocado, walnut and figs.
Oops, forgot pine nuts, olives and haloumi.
nasturtiums.
walnut, pear (fresh or spiced)) and blue cheese on a bed of mixed leaves dressed with a balsamic reduction.
Endives (chicory) apple and walnuts in vinaigrette sauce.
Beetroot, orange and walnut with watercress, with a vinaigrette dressing.

Griddled courgettes, French beans and sun dried tomatoes with a tahini dressing.

Roast parsnips on a bed of leaves with a caper, raisin and walnut dressing made with sherry vinegar. Some crumbled feta goes nice with this too.

Pearl barley, roast squash, pumpkin seeds, olives, sun dried tomatoes and broccoli with a balsamic dressing.

Chicory, pear, sweet and salty caramelised almonds with blue cheese and a lemon dressing.
Potato Salad - with lots of chives, a dab of mustard, a few peppercorns, as well as the best mayo you can buy/make.

Asparagus is good (when in season - or if you can bear to buy the Peruvian stuff) - cut up into inch sized bits and mix with some nice leaves and drizzle with a sharp lemony dressing.
One thing we had on holiday that I need to remember - very finely peeled radish. It must have been done by machine (?) but the radish was presented in a ribbon, less than 1mm thick - not only did it look amazing but it tasted good that way, too.
Diced mango, halved grapes, apple, avocado, feta, beetroot, raw mushroom

Chopped Spinach!
Avocado
Radish
Roasted seeds
Beetroot
Figs
Pear
Pine nuts
Walnuts
Candied pecans
Endive
Baby spinach
Chicory
Fennel

A typical bowl of salad here usually consists of chopped baby gem, chopped Chinese leaves, rocket, a few sticks of celery finely chopped, a couple of sweet pointy peppers sliced, half a sliced cucumber, and a large handful of green, red or black grapes halved. All tossed together.
I like mine much more simple, iceberg lettuce, tomato (vine if I'm having a treat), cucumber. I can't eat it with anything like fruit or nuts or seeds in it or things like grated carrot or beetroot.

Treat extras would be pasta, pickled onion (though not together!), coleslaw, cheese, some nice deli ham. Maybe some onion. I love the Ploughman's type with pork pie and pickle.

Tesco do a lovely posh (for me) mushroom pasta salad.

Rocket is nice with some duck and sweet chilli sauce or rocket with parmesan. I used to love a salad they did at a friend's family's Indian restaurant, quite simple tomato, onion, cucumber... but all diced up really small. It was lovely!

Thanks so much for all the suggestions. Plenty of 'food' for thought there.
And don't forget the Heinz Salad Cream. A salad would be incomplete without that in my view.

^^ That's something that is never on the menu. Yuk!
I had a rocket and tomato salad in a restaurant called Bank in London many years ago and it was lovely. I've tried recreating the balsamic vinaigrette but it never seems to work.

I love a Greek with feta.
My simple salad - lettuce, avocado and artichoke hearts from the jar. I use a bit of the brine from the jar of artichoke and toss the lettuce, avocado and artichoke together. Absolutely delicious. Anyone love salad would like this.
watercress..........delish, rocket as an alternative.

Maple syrup in dressings - mix it with basalmic, dijon, herbs and seasoning and shake before adding your oil.
Pork pie.
