Sourdough bread?

I have seen this in a recipe but am not sure what type of bread it is - Can anyone shine any light please?
Also, if I can't get it locally, what would be an equivalent type of bread to buy?

I get mine from the local Italian food shop. It is a totally diffent flavour to the cotton-wool textured rubbish which passes for bread in your local supermarket. A bit more expensive, but well worth it.

The "better" supermarkets will probably stock a sourdough-style bread - Waitrose do one called pain au levain - though it won't quite have the "edge" of a proper sourdough.

You need a starter or "Mother" to make this type of bread.
There are all sorts of starters.Just Google "Sourdough starter."
There are equivalent breads in deli shops etc. but you can't beat the real thing .
