if you bring ice cream back from a holiday

say in cornwall - and drive it back to manchester - and it melts , can you re freeze it and bring it back to how it was / should be

It it had melted would the different constituents not separate? I'd guess it couldn't be refrozen back to the original state.
In my experience ice cream that has melted and been refrozen takes on a horrible texture and appearance.
Not really, I think you will find that it separates to a degree and it will be full of ice crystals, not good at all.
I think salmonella & listeria would have a field day
As RATTER say's it will separate..Not a good idea
three things. number one the emulsion will probably separate, number two, the air churned into it will dissipate changing the texture, and. number three, as its made from fresh real ingredients, the bugs would have a field day, don't do it!
If you Google for 'refreeze icecream' you'll find any number of links, on the lines of 'it just won't work' to 'don't even bother trying'.

to be honest that was just an example

it actually only from north wales to stockport

so it may just be ok

but wanted to know what happens if completely thawed out
It's not nice any more :-)
Noooooo do not refreeze it. I have spent my lifetime working in an ice cream selling environment and once they come out of the freezer they must never ever go back in.
I'm not sure if this is a serious question but it its, the answer is no. You must never refreeze ice cream.
