Good Tasty Recipes For Chicken Fillets ...advice

ok, i have embarked on a low carb hi protein diet, local market sells me a massive box of fillets at a great price, anyway. i can do the usual chicken fillet salad but wonder how to spice this up ? i can do chicken fillet with veg plus gravy. i was wondering how to make chicken tastier with some kind of a marinade or seasoning , what way is it done ? i love indian food so if any of you can tell me how to cook / marinade fillets then add to rice then great.

For more on marking an answer as the "Best Answer", please visit our FAQ.You can slice the fillet through the middle and stuff with herby cream cheese and then wrap a streaky bacon rasher around it (I stick a cocktail stick through the middle to hold it all together). Piri piri sauce is good. I use a lot of cajun seasoning as well. Or you could make it into Indian or Thai curry and have with stir fry veg in oyster sauce instead of rice.
standby for me is chicken kebabs, i usually marinate in a little oil, crushed garlic & paprika, then thread on skewers with veggies of your choice. i have them in a pitta pocket with salad
another one is a tomato sauce with garlic & chilli, fry the chicken till its browned then add the sauce & cook till the chicken is cooked through,

Slice across the grain into medallions - the thinner, the more you get... then marinade in a bit of soy sauce (Kikkoman for preference) You can add paprika, chilli or whatever, then quick fry and add to cooked rice. The soy sauce caramelises and adds flavour. Oven roasted or fried onions are good, plus your favouirite veg. Sorry if this sounds Chinese...
