The Best Potatoes For Chips?

Bought a new deep fryer today and chipped some left over Vivaldi spuds from Xmas... they were awful! I reckon I've chosen the wrong potato to chip as apposed to a rubbish deep fryer. King Ed's? Piper's?

Maris Pipers the best or King Edwards. Fried in lard. Just like my Grandma used to make. Have revived this lately with a pan on the stove and a chip basket from Asda (cost £1). Lovely.

cut potatoes into chips dry in a tea towel and plunge into hot oil -par boil? why? its like roasties -since the cheffies have decided you have to par boil roast potatoes everyone is doing it -my roasties are legendary - and not parboiled just shoved it hot fat. getting back to the OP any potato that is not described as 'waxy' works great.
Desiree best all round spud, super chips. The only reason chippies switched to Maris Piper was that they soaked up less fat and less "eye" work when peeling. Nowadays chippies have them ready peeled/chipped and always Maris Piper, because commercially most profitable. Try some Desiree in your fryer and if no good, take it to the tip!
Sorry, but I just HAVE to tell my potato joke. I KNOW it an oldie, but then so am I ! Daddy potato has 3 daughters and he tells them all to go out and find a good husband. He gives them a year. After a year, they come back. Daddy to 1st daughter. "tell me my daughter, who have you decided to marry?" she says "I'm going to marry a KING Edward." Daddy is very impressed by the thought of a KING in the family and says so. To daughter 2 he asks the same question and she says "I'm going to marry a Jersey Royal". Daddy is again very impressed at the thought of a ROYAL being in the family. He asks daughter 3 and she says "I'm going to marry Desmond Lynam". Daddy is appalled and says "but you can't marry Desmond Lynam, he's a common tater"!!! Ok ok, I know ...I'll get my coat !
