Water In Bacon

I guess were all plagued by the water content in Bacon these days.

Does anyone have a recommendation for a brand that can be fried, like it used to be.

i hate all the white gunky fluid while cooking my back bacon.
Love the taste but it drives me nuts!

I never fry bacon always grill or oven bake.
I often work in a pro kitchen that cooks 15Kg ( yes 15 kilos) of bacon and 10 kilos of sausages every morning just for breakfast rolls! All cooked in the ovens.
