Sturgeon

I've just been watching a programme about people paying obscene prices for luxury food and drink - including caviar.

The sturgeon is a huge fish, but I've never seen it on a menu. What happens to the fish after it's been killed and the roe/caviar extracted?

I don't think the fish is necessarily killed in the process of extraction - but my memory may be wrong.

Once the sturgeon has served it's purpose, to organise lesser fish into a noisy but largely ineffectual shoal, the salmon returns to claim the prize as his own.

It's definitely killed - I saw the dead fish in the prog I was watching. It's a huge fish.

Presumably there is more roe in the big 'uns - these people scanned the fish before they killed it, to make sure it was worth it....

apparently people are trying now to farm sturgeon because the fish is becoming endangered.

I always thought that Sturgeons when caught became the property of the Monarch of the UK.

When did this law change.?

I think the eggs/roe are manually extracted, and the fish is put back to water.

Aren't they all farmed now - I'm sure I watched the same programme (World's most expensive foods (or something similar)). Not saying that makes it any better what happens to the actual fish.

They farm salmon -they still kill them.
