Panzanella Salad

Has anyone made this and enjoyed it?All recipes tell you to use stale bread and some tell you to bake/fry it in olive oil.I am confused.Is the bread supposed to be soggy or crisp? thanks in advance.

I thought you were supposed to soak it in water/vinegarette then squeeze it out before adding it to the salad. Frying or baking would make it like croutons which would be wrong. Getting the right bread will make a big difference as you need a dense, dry bread, white sliced or bloomer will just dissolve into mush and be horrible.
