Yes, definitely - especially if you are doing a tomato based soup :-)

Thankyou for your reply and the tomato suggestion.
I made a bucketfull this morning .. 6lb of tomato's included with courgettes, paprika and dont forget the Basil !
courgettes go with owt!
'Cos they taste of nowt!
But they do bulk the soup up .. nothing worse than watery soup !
They take on the flavour of what you cook with them, makes em ideal for soup.

Ditto for pumpkin. I've got four Ont allotment to get through.
...unlike celery, which overpowers all the other ingredients. Whilst I like celery I cannot abide it in soup.
I`m the opposite - I don`t like celery but I can tolerate it in soup because it loses a lot of the flavour (IMO) I`m not sure I`d put paprika with courgettes though.
The trouble with celery is that you can no longer get the white stuff anymore, with the yellow leaves. It's all this green, bitter stuff.
Agreed. I do quite like it as a crudite with Stilton though. Anyway, my courgette soup - saute 2 shallots in butter and sweat the sliced courgette. Make stock with a mix of chicken (Oxo) and veg (Knorr) cubes. Mix with the courgette, simmer, add a sliced potato and season with salt and white pepper. Blend and have with crusty bread.
Zuccini (courgette) and garlic soup is lovely -saute a couple of spring onions with a few chopped cloves of garlic -add courgettes and homemade chicken stock simmer for about 5 mins puree and add cream and fresh chopped parsley.
Roasted garlic would be even better, I would think.
Really dislike tomato soup unless it is unthickened and spicy always too sweet

I've recently started making a very easy courgette and tomato soup at work.
Amounts are approximate...
Olive oil
2 courgettes...chopped
1 onion...chopped
2 cloves garlic
Ground cumin,sweet paprika,ground coriander...1/2 TSP each,pinch...or more...of dried chillie flakes,knorr veg or chicken stock cube
2 tins chopped tomatoes...or fresh if wanted

Gently heat the olive oil,add the courgettes,onion and garlic. Sauté until the veg start to soften. Add the spices and cook a bit more. Add the tomatoes and stock cube. Simmer for 30 minutes. Adjust seasoning. Add some water if too thick. Blitz with a hand blender.
^ Use Tamar water and the soup is nuclear.....a good usage of Devon cream though.....
