Surplus Of Chili Peppers

We have had a glut of peppers this year. Any ideas on how to preserve them? I don't know if they will dry naturally at this time of year like they do abroad.

I have no problem with freezing them and cutting them up/chopping etc whilst still frozen just before cooking them. Chilli chutney ??
I love them pickled. Just chop em and chuck in a jar with some herbs, garlic and vinegar. Delist!
mine dry in the bottom of the fridge whether I want them to or not... they are good in pickled onions, soups etc etc... my favourite,though, is a Jamaican jerk marinade that sits in jars in my fridge for months.
Like retrocop I freeze them. Have only just finished last years frozen crop.

You can dry them in any warm place and, at a push, the lowest setting of an oven for a few hours. Chili oil is easy to do - pop as many as you like into a nice bottle and top with a bland oil such as canola or a light olive oil and use to spice up dressing and marinade.
