Pie, Mash, Liquor And Jellied Eels

Just watching a programme where a Pie & Mash shop was featured. My son walked in just when they were talking about the liquor so I missed what it's actually made of. Does anyone know?
And do you eat jellied eels? I've never tried them but my Nan used to love them.

The liquor is a savoury parsley sauce, sometimes made from the water in which the eels were cooked, but recipes vary. It's made from parsley mixed with butter, flour, water and some seasoning.

I know the liquor looks watery. I'd like to try it though. I know people queuing down the street isn't a true indication of quality though.
My mother lives in Wells-Next-The-Sea and there's a chip shop there where at lunch time the queue must go at least 200m down the street. We managed to get in early (love fish and chips by the sea) and it was nothing special. Not even as good as the Fish & Chip shop we have locally in Northampton......quite far from the sea!
