How do you make vegetables appetising to eat, what recipes and/or recipe books can ABers recommend?...After all, we're told they're good for us, even if they taste..... Ta Muchly.
Roasted or sauteed veg is gorgeous and can replace your standard boiled veg without giving up the other stuff or having to go out of your way to make it.
Use a light wipe of melted butter rather than olive oil and season them with salt and pepper and cook quite hot. Turn them halfway through cooking.
I used to really dislike cauliflower, but if you slice it and almost dry fry it until it has a nice brown colour to it, it is nutty and absolutely delicious.
Brussels sprouts are delicious if shredded and fried with butter and seasoning. Add chopped chestnuts, pine nuts and/or bacon.
If you don't like vegetables hide them in your food. I always put grated carrot in the mince for cottage pie or bolognese/lasagne. Swede or celeriac in mashed potato. Also cauliflower is nice in mash. Add chopped tomatoes to pasta along with peppers and onions. Broccoli and cauliflower mixed together. Vegetables do not need to be boiled to death they taste better with a bit if bite to them or roasted.
I find that I can mindlessly eat if I am watching television.
So sticks of carrots, cucumbers, red peppers etc on a dish at my elbow gets munched without noticing. Add a bowl of hummus and you're onto a winner.
woodie - I loathe and detest cauliflower - make it for sista on a Sunday but if I am coming through a vertigo attack/nauseaus - I could vonik/vomit and vomit with the smell of it.
However, tried in a cafe last week a wee cup of cauliflower/butternut squash soup. To die for.
I like a colourful plate of veg, white dinners like cauliflower and potatoes I dislike, recently I got a liking for sweet potatoes, aubergine and celery, I loved to steam my veg but lately if I'm having a roast, I like to use vegetables under the meat like a trivet and they are so tasty. I think meat makes veg tasty for me, not a great answer if you are a vegetarian
eanceoil +JJ...that's just taken me right back ...my mother wasn't the best of cooks...I remember she would poach some white fish in milk,.butter was involved as floating globules of fat....she served it with boiled white potatoes, and cauliflower, on white plates. ;)
It depends what style of food you are eating them with. I`m not mad on vegetables but I love Chinese style vag. Stir fried in a wok with a little ginger, garlic, watered down oyster sauce and soy sauce. I could eat them all day long.
I make cauliflower, broccoli and potato cheese which is a bit more interesting than just cauliflower cheese. Might add some chopped sprouts next time :o)
Stir fries or fajitas with peppers, onions are good.
