Hi All,

Does anyone know where you can buy gallon size containers of red and/or green Tabasco sauce?

Do not know anywhere that sells it in that size and I work in catering

Gallons of Tabasco ? Who do you have a grudge against ?
3.8 litre...that'll be a US gallon. Still a bargain....depending on delivery charge, of course!
In a pro kitchen we would not use ready made sauce in a dish, we would season from scratch using chilli and spices. I do not know if that is what you want to do with this. Alternately you can buy cases of the standard size bottles from a cash and carry.

Thanks for all the advice. Eddie51 do you know how to make 'proper' Tabasco sauce, especially the green stuff?
I'm no expert, but....I think that Tabasco sauce IS used in professional kitchens (just as Worcestershire sauce is) because it imparts a very distinctive flavour that's just not possible to create in a few minutes (or hours!). It's manufacture involves aging in barrels for about three years (just like Worcestershire sauce) and is definitely not a DIY job.
Tabasco sauce is used in home kitchens and small pro kitchens but the kitchen I work in does 1,000 meals a day . We would make at least 20 or 30 litres of chilli or curry for example, too much to use bottles sauce.
