Fresh Pork Joint

How long can I keep a fresh pork joint in the fridge, before I cook it.

Would four days be ok? I bought it yesterday and really don't want to cook it before Tuesday.

So far, pork, crackling, mash, roasties (Minty), pudding (Mazie)

Margo, you may need to bring wine after all.
Anyone else coming?

Surely you always fast freeze in order to minimise the size of the ice crystals and thus minimise damage to the food structure ?
