Cast Iron Griddle Pan

If you are cooking steak, chops on a cast iron griddle pan, do you brush oil on the meat or on the pan? (Or both)?

I have tried each way but the steak always seems to stick slightly.

Any tips?

Meat.
Have you seasoned the pan Tilly?
And don't worry it. It will release when done, you only need to turn once, don't try flipping it every few seconds.

I have seasoned the pan, Danny, but the meat sticks on the ridges of the griddle. It's not a huge problem but it's a bit irksome when you have to fight to lift it andturn it over

Thank you Eccles, I'll leave it alone then, instead of fiddling with it.
Tilly, Have pan on high heat and don't cook for more than 2 minutes a side.

As it's steak and we like medium rare steak, two minutes should be enough.

I might try some dijonaisse with it ;-)

Thanks for that link Danny. I didn't bake my pan, i just heated it up with oil on it. It's a skillet , rather than a pan.
