Bread - Proving

Good evening. Is anyone able to tell me if i make dough now can i leave it prove until the morning? I was planning to knock it back around 6am then let it prove again, before baking. I have friends coming for breakfast and wanted to serve fresh baked bread but won't have time to do the whole thing in the morning. Thank you in advance.

Leaving it in the fridge will do it no harm. A slow prove is good for the flavour.
