How To Reheat 'refreshed' Veg

On cookery programmes etc I often see boiled veg being plunged into a bowl of iced water to 'refresh' it. I understand why they do this ie it stops the cooking process, avoids over cooking from the latent heat and maintains the colour of the veg etc. But the veg is then stone cold - so how do they reheat it to an acceptable serving temperature without cooking it more?

For more on marking an answer as the "Best Answer", please visit our FAQ.I do a similar thing at Christmas, on Christmas Eve I blanch carrots, sprouts etc then cool quickly in ice, dry and put into serving dishes, cover with foil. When the roasties are in the oven they go into the oven for about 10 minutes and are fine, maybe a bit of butter, fewer pans lying around, all I have to worry about are the roasties and the gravy.
